Brain-Boosting Pesto

Ingredients

2 cups lightly packed basil
1/3 cup toasted walnuts
1/3 cup EVOO
1/3 cup MCT oil
1/4 cup nutritional yeast
1 garlic clove
Juice of 1 lemon
Zest of 1/2 of a lemon
3/4 tsp salt

Preparation
Place everything except the EVOO and MCT oil into a food processor. Pulse or blend on low while slowly pouring in the oils.  The longer you blend it the creamier it becomes, so if you like it chunky, don’t over-do it.  Also, EVOO can taste bitter when blended for too long, so I suggest pouring the MCT oil in first.  If you like it even chunkier, use a mortar and pestle instead of a food processor.  

Note: If you don't have basil on hand, feel free to substitute other herbs such as cilantro, mint or parsley or a mix of them all. 

Why is this good for your brain?
Walnuts are full of omega-3s, EVOO with omega-9s and MCT oil fuels the brain as well. In addition to brain support, nutritional yeast is full of B vitamins, which become depleted when we are stressed, so it’s a nice way to replenish some of those Bs.
